An international group of pastry chefs wishing to share their common desire for quality, creativity and originality; exchanging views on trends and important events, techniques and the evolution of the market.
Having to create daily, always excelling, Valrhona is perfectly aware of how demanding your profession is.
Concours C3
In view of this, Valrhona has decided to valorise the talents of the members of the Cercle des Chefs by launching the Grand Concours C3, Consecrations of the Cercle des Chefs.
All candidates are members of the Cercle des Chefs.
- The candidate will submit an original recipe for a dessert on the theme “3 textures of chocolate” via the Cercle des Chefs site.
- In May, a first selection will be made from files submitted to a jury of professionals Presided over by Christophe Michalak, pâtissier at the Plaza-Athénée, Paris (France)
- The 15 best entrants saw their desserts created and tasted by a jury of professionals, presided over by Anne-Sophie Pic, head chef at the Restaurant Pic, 3 Michelin stars, in Valence (France)
- 6 entrants went though to the final which will be held on 23 January 2008 at the Madrid Fusion international gastronomy meet in Madrid (Spain).
